OUR FOOD
The ethos behind our food is very simple. Take the best of fresh Irish produce, treat it well and treat it simply. We believe so passionately about making everything fresh and daily. Taste and nutrition is at the core of our food. All our veg is cooked and treated with respect to keep as much nutrition as possible.
MEATS
We love to BBQ and our Big Green Egg is always on the go! By marinating all of our cuts of meat we feel we get the best of flavour out of them. To keep it interesting we use herbs, yoghurts, miso, cochugjung ….the list goes on.
We also believe strongly in using all cuts from the animal – and believe that by treating them respectfully and with time you can create some beautiful food. We love to slow cook shins, cheeks, tails, ham hocks – which always works well on a winters day!


FISH
We work very closely with SSI and believe in using the less common types of fish in order to increase the sustainability of fish farming in this country.
We BBQ, cure, roast and poach – ling, sea trout, mahi mahi, eel – just some of the types of fish we like to use every day. A beautiful source of protein and a wonderful addition to our salads!
VEGETABLES & SALADS
We were very lucky to discover Sean Hussey and Sons very early after we opened our doors. Tiller and Grain have a very strong ethos of buying Irish produce and supporting our farmers and our local economy. Hussey and Sons has the same belief and goes out of their way to source small local producers producing beautiful Irish vegetables aswell as other products such as Wildwood Vinegars; local honeys and beautiful cheeses.
What we love about working with someone like Sean is the relationship and they can call on us to take surplus products from certain producers that could potentially go into landfill or to feed livestock. As an Irish producer, waste is key and sometimes they do not have the facilities to sell them on.
As chefs and a small business we feel it is our responsibility to take this produce and create dishes that will suit the product and ultimately feed our customers healthy, nutritious food that has come from the local land.

Let there be cake…All off the cake!! We make all of our pastries in house by using the best of creamy Irish butter, Irish seasonal fruits and gorgeous high quality chocolate.
We like to keep all our customers happy and healthy with occasional treats – to include Donut Fridays, Vegan options and using some different products such has Tahini and fresh herbs like basil and rosemary.
